Where did the weekend go? Serious question. I enjoyed a few too many heavy meals over the past few days, so I thought we could lighten up a little with my favorite vegan dinners.

You won’t find any meat substitutes here—just wholesome vegan meals made with protein-rich whole grains, beans, and nuts. You’ll also see plenty of fresh, colorful produce, and occasionally some tofu.

As a vegetarian, a lot of my recipes happen to be vegan, or would be if I simply left off the sprinkle of cheese. I love the challenge of making my favorite cheesy recipes vegan, like when I figured out how to make vegan versions of the lasagna and enchiladas for my cookbook.

If you’re looking to reduce your consumption of animal products, you’re in the right place. I’ve picked out 29 favorite recipes to highlight today. You’ll find lots of comments below proving that even the most adamant carnivores can fall in love with a vegan meal!

I tossed all of that with my healthier honey-mustard dressing, which I like to call sunshine salad dressing. The end result is tangy and irresistible, crisp and refreshing, and quite filling.

Spicy Kale and Coconut Fried Rice

I’m jet lagged from my trip to Greece, so I made one of my old favorites to share again! It’s comforting and packed with nutrients, which is just what I need right now.

In fact, I enjoy this recipe so much that it inspired a recipe in my cookbook, the colorful coconut fried rice with edamame on page 182. If you haven’t tried that one yet, you’ve really missed out.

ingredients

This dish is a relatively quick weeknight meal and a fun alternative to my go-to extra vegetable fried rice. This recipe has some Thai flavors, including sriracha, lime and cilantro.

I added coconut flakes, too! The big, toasted coconut flakes are savory and remind me of bacon. We all know that bacon and eggs belong together, so today, I present to you a healthier, vegetarian option.

For some reason, when I shared this recipe four years ago, I called it a stir-fry. It’s fried rice, not a stir fry! This is a stir fry. Moving on.

Simple Breakfast Tostadas

Did you see this one coming? This recipe is a combination of my recipes for pico de gallo, refried beans and fried eggs (or scrambled, you choose) on top of a crispy baked corn tortilla. Need I say more?

Ok, I’ll go on. I love Mexican cuisine and its endless variations on basic components. These vegetarian breakfast tostadas are such a fun breakfast option for weekends! They look impressive but each component is quite simple to make.

In fact, if you have leftover pico de gallo and refried beans, these are easy to pull off on a regular weekday. Pile them together and breakfast is served (or dinner!).

The idea for this recipe came from a local restaurant called Tavern. It’s right next door to a bicycle shop where I had been looking for a new bike. At that point I had looked at every bike on the internet and available locally, and my patient boyfriend and I got hungry.

We went next door to Tavern and ordered their “breakfast nachos,” which didn’t look like I thought they would. They were made with crisp, flat, mini corn tortillas piled up like you see here—like mini tostadas! They hit the spot and I knew I had to recreate them.

Baked Jalapeño Poppers

It’s football season, and it’s about time for a proper jalapeño popper recipe on this food blog! These jalapeño poppers are lighter than most since they’re baked, not fried, and bacon-free (more on that in a minute).

These jalapeño poppers are stuffed with a fresh, herbed cream cheese mixture and topped with just enough cheddar cheese to turn golden. They are beyond delicious, and they’re not greasy at all. If a popper could be gourmet, this one is! I think they’re going to be your new favorite.

The inspiration for these stuffed jalapeños came from my assistant-turned-friend Megan’s birthday party for her husband. The guests all brought party snacks and a few even brought Cookie and Kate recipes, which was a fun surprise.

Kettle brand barbecue chips and jalapeños

Someone brought jalapeño poppers wrapped in bacon, and I eyed them enviously. Being a vegetarian and a former bacon lover, I can appreciate the crisp, rich, smoky flavor that bacon must have brought to those poppers.

I came home with the mission to make bacon-free jalapeño poppers that taste just as good. Around that time, Kettle Brand reached out for a sponsorship and sent me the most amazing Organic Country Style Barbecue potato chips. I have a soft spot for potato chips and they made my jalapeño popper dreams come true!

The barbecue potato chips offer a similarly crisp, rich, smoky flavor that I can’t get enough of. Bonus? The chips are gluten free, so that means these poppers are gluten free as well. Poppers for everyone!
